White Chocolate Candy Cane Cookies

One of the most Christmas-y cookies you can make!
I saw these in an online group and decided we had to give them a try. We are making round 2 of them this weekend because they are so yummy.

Ingredients:
1 1/4 cup all-purpose flour
1/2 cup unsalted butter (room temp)
3/4 cup white chocolate chips
1/2 cup crushed candy canes (plus more for dipping)
1 pinch salt
1/4 teaspoon baking soda
1 pinch baking powder
1 egg (room temp)
1/2 cup sugar (plus 1 tbsp)
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
Instructions:
Whisk together the flour, baking soda, baking powder & salt
In a separate bowl, beat the butter and sugar until light & fluffy
While the mixer is running, add the egg and then vanilla & peppermint extracts
Slowly add the flour mixture and scrape the bowl down.
Add the white chocolate chips and crushed candy canes and mix until just incorporated
Place the cookie dough on a parchment lined cookie sheet (Don't skip the paper. I like the pre-cut ones) using and ice cream scoop if you have one. About a 2 tbsp sized portion for each cookie
Dip the top of each ball of cookie dough into a bowl filled with crushed candy canes
Chill on the baking sheet for 5-10 minutes in the refrigerator. Bake at 350° for about 6 minutes (watch them, you do not want them to brown).
Allow to cool on cookie sheet then transfer to wire rack or a plate.
